Baked Apples With Berries (Low Fat)

Ingredients

- 300g frozen mixed berries
- 4 large cooking apples, such as Bramley or Granny Smith
- 4 cardamom pods
- 150g fat-free Greek-style yogurt
- 2 tsp honey

Method

1. Place the berries in a sieve set over a bowl. Cover and leave to thaw in the fridge overnight.

2. Preheat the oven to 160°C/Fan 140°C/Gas Mark 3. Line a baking tray or ovenproof dish with baking paper.

3. Remove about ¾ of the core from each apple, starting at the top and ensuring you do not cut all the way through. Use a small, sharp knife to increase each hole to a diameter of 4cm. Lightly score around the middle of each apple and trim a small slice off the base so it stands flat.

4. Place the apples in the prepared tray or dish. Place a cardamom pod inside each one, then fill with ¾ of the defrosted berries, packing them in tightly. Bake, uncovered, for 45 minutes or until the apples are just tender.

5. Meanwhile, mash the remaining berries in a small bowl using a fork. Stir in the yogurt and honey. Serve the apples warm, with the berry yogurt.
