Ingredients
- 2 tbsp toasted chopped hazelnuts*
- 4 small scoops of good quality vanilla ice cream
- 8 chocolate chip cookies
*Desiccated coconut, chocolate chips, cake sprinkles or chopped salted peanuts can be used instead of the hazelnuts if preferred.
Method:
1. Place the hazelnuts in a small bowl. Sandwich each scoop of ice cream between two cookies, pressing together gently.
2. Roll the edge of each cookie sandwich in the hazelnuts to coat. Serve immediately.
