Ingredients:
- Butter, for greasing
- 320g self-raising flour
- 220g caster sugar
- 435g tin pineapple crush (or tin pineapple chunks and crush using a fork)
- 100g walnuts, roughly chopped
- Icing sugar, to dust
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Lightly grease a 23cm round cake tin and line with baking paper.
2. Sift the flour into a medium bowl and stir in the sugar. Add the pineapple crush and juice and the walnuts, and stir well. Pour into the tin and smooth the surface.
3. Bake for 40 - 45 minutes, until a skewer inserted in the centre comes out clean. Leave to cool in the tin for 5 minutes, then turn out on to a wire rack and leave to cool completely.
4. Dust with icing sugar and serve with custard, if liked.
