Ingredients:

- 8 rice paper sheets (20cm)
- 8 large basil leaves
- 6 lettuce leaves, shredded
- 2 carrots, thinly sliced
- 1 red pepper, thinly sliced
- 1 medium cucumber, cut into sticks
- 110g (4oz) of finely shredded red cabbage
- 2 spring onions, white and tender green, thinly sliced

For peanut sauce (optional):

- 3 tbsp smooth peanut butter
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 small clove garlic, minced
- ½ lime, juiced

Method

1. In a large bowl of cold water soak a rice sheet for 15 seconds, remove and lay on a sheet of parchment paper. Allow to rest for 15 seconds.

2. On the lower section of the rice paper wrap, place a basil leaf, some shredded lettuce, carrots, red pepper, cucumber, red cabbage and spring onions.

3. Fold over the smaller end of the rice paper and wrap over the vegetables.

4. When ½ way down the wrapper, bring up both sides of the paper, and continue to roll tightly until you get to the end of the wrapper.

5. Repeat with the remaining ingredients: if you end up with more ingredients, just make more.

6. For the optional peanut sauce, add all the ingredients to a bowl and mix well. If it's too thick, simply add a little water.
