Hot Cross Bun Bread & Butter Pudding

Cooking time: 35 minutes
Serves: 4

If served as four portions, provides 442 cals, 39g fat (of which 14g saturates), 21g sugar and 1g salt per portion.

Ingredients

- 70g (2½oz) softened butter, for greasing and buttering
- 4 hot cross buns, halved
- 25g (1oz) chocolate chips
- 3 medium eggs
- 1 tsp vanilla extract
- 20g caster sugar
- 350ml (12fl oz) milk
- Double cream, for serving (optional)

Method

1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.

2. Using approximately 20g (¾oz) of the softened butter liberally grease a 1 litre pie dish.

3. With the remaining butter, spread over each hot cross bun half then arrange them in the dish, layered butter side up or stacked against each other. Poke half the chocolate chips between the rolls.

4. Add the eggs, vanilla extract and caster sugar to a bowl and mix together. Add the milk and mix again.

5. Pour the mixture over the hot cross buns and leave to soak for up to 30 minutes. Before baking, scatter over the remaining chocolate chips.

6. Place the dish in the hot oven and bake for 35 minutes, or until it has a wobble. Serve with double cream if desired.
