Serves: 4

If served as four portions, provides 363 cals, 17g fat (of which 4g saturates), 7g sugar and 0.7g salt per portion.

Ingredients

- 1lb (16oz) lean ground beef (90% lean)
- 1 small green pepper, chopped
- ¼ cup chopped onion
- 225g (8oz) tinned tomato sauce
- ½ cup sliced pimiento stuffed olives
- ¼ cup raisins
- 1 tbsp cider vinegar
- 2 cups hot cooked rice
- Fresh cilantro leaves (optional)

Method

1. In a large skillet, cook beef with pepper and onion over medium-high heat until no longer pink, 5 - 7 minutes; crumble beef. Stir in tomato sauce, olives, raisins and vinegar; bring to a boil. Reduce heat; simmer, uncovered, until raisins are softened, 5 - 6 minutes.

2. Serve with rice. If desired, top with fresh cilantro to serve.
