I don't know where you got all that guff from but we had family out for most of June and early July and none reported any of what you mentioned.
Just sailed through.

Think the proof of income refers to having enough money (spending money) for the duration of stay in Spain. This has come up in recent days because the UK Government has updated it travel advice for UK tourists heading to Spain, and specifically additional documents you may need to present to use the e-gates at Spanish airports.
Not heard anything about prescriptions though.

If Spain have a mind to then they can implement the regs governing third country nationals re accommodation and enough money to sustain yourself. I don't see that happening. Maybe if you were coming from a sub-saharian country but hardly the UK.
I saw a report in Informacion during the week which said tourists were staying for shorter holidays but spending a lot more.

I arrived 8th July, still here, think the queues would be 8 hours long if they tried to implement that.

At Spanish border control, you may need to:
show a return or onward ticket
show you have enough money for your stay
show proof of accommodation for your stay, for example, a hotel booking confirmation, proof of address if visiting your own property (e.g. second home), or an invitation from your host or proof of their address if staying with a third party, friends or family. The Spanish government has clarified that the “carta de invitation” is one of the options available to prove that you have accommodation if staying with friends or family. More information is available from the Spanish Ministry of Interior.

We all know the chances of this happening are slim, but this could be one of those things where just out of devilment or someone having a stressful bad day at the border completely surprises arrivals and says show me your paperwork for blah blah blah.

It appears a sense of reality has now returned, at least to some EU countries. Yes of course there will always be some jobsworth who may want to flex their muscles, but that is probably more a recruitment problem than a real issue. I now have a number of examples where friends or acquaintances have been waived through immigration barriers in France, Spain and Portugal with little or no bureaucracy. Greece is the next on the list although they were never very stringent on their rules even before the U.K. left the EU.
