Preparation Time: 5 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions, provides 155 cals, 4g fat (of which 1g saturates), 2g sugar and 0.7g salt per portion.

Ingredients

- 3 tbsp lime juice
- 3 tbsp reduced-sodium soy sauce
- 3 tbsp stir-fry sauce
- 4½ tsp grated fresh gingerroot
- 1 tsp crushed red pepper flakes
- 3 garlic cloves, minced
- 1 (455g/1lb) pork tenderloin

Method

1. In a bowl, combine the first 6 ingredients. Place the pork in a large bowl; add half the marinade. Turn pork to coat; cover and refrigerate for 2 hours, turning occasionally. Cover and refrigerate remaining marinade for basting.

2. Drain and discard marinade. Grill pork, covered, over high heat until a thermometer reads 160° and juices run clear, 15 - 20 minutes, basting occasionally with reserved marinade.
