Spinach & Cheddar Deep Pan Pizza

Serves: 4
If served as four portions, provides 509 cals, 20g fat (of which 6g saturates), 4g sugar and 2.3g salt per portion.
Ingredients
- 7g (¼oz) dried yeast (or 14g/½oz fresh yeast)
- 375g (13oz) strong plain flour
- 1 tsp salt
- 250ml (9fl oz) warm water
- 2 tbsp olive oil
- 3 nuggets frozen spinach, defrosted
For the tomato sauce:
- 200g (7oz) passata
- 2 cloves of garlic, crushed or grated
- 2 tsp dried oregano
- Salt and pepper
- 2 medium tomatoes, sliced
- 100g (3½oz) feta, crumbled
- 25g (1oz) Parmesan, grated (optional)
Method
1. In a large bowl, mix together the yeast, flour and salt. Make a well in the flour mixture, pour in the water and mix thoroughly. When combined, turn dough onto a clean surface and knead for 10 minutes, until it's elastic.
2. Add 1 tbsp of olive oil to a bowl. Form the dough into a ball and put into the bowl, cover and put into a cold oven, or warm place for 1 hour (the dough should roughly double in size).
3. Squeeze the defrosted spinach to remove any excess water and chop finely.
4. Make the tomato sauce, add passata, garlic, oregano, salt and pepper to a medium saucepan and simmer for 4 - 5 minutes until the sauce thickens. Remove to the side to cool.
5. After 1 hour, turn the proving dough onto a floured surface, add the remnants of oil from the bowl and the remaining 1 tbsp of olive oil onto a large roasting tray and spread to the corners and sides. Press out the dough on to the tray and push into the sides and slightly up the edge of the tray. Pre-heat the oven to 220°C/Fan 200°C/Gas Mark 7.
6. Spoon the tomato sauce evenly onto the pizza dough, spreading out to the edges. Evenly distribute the spinach, tomatoes and feta cheese. Finish with a scattering of the Parmesan cheese and season with black pepper and oregano if desired.
7. Bake for 20 minutes then serve with a side salad.
