Chilled Pea & Mint Soup

Takes: 30 minutes (plus chilling time)
Serves: 6

Ingredients

- 2 tbsp olive oil
- 20g butter, softened
- 1 onion, roughly chopped
- 2 garlic cloves, crushed
- 750ml vegetable or chicken stock
- 1kg frozen peas, defrosted
- Salt and freshly ground black pepper
- 2 tbsp freshly chopped mint
- 2 tbsp crème fraîche
- 1 tbsp lemon juice

Method

1. Heat the oil and butter in a saucepan over a medium - high heat. Reduce the heat the medium - low, add the onion and garlic and cook, stirring often, for 15 minutes or until tender.

2. Add the stock and bring to the boil, then add the peas. Remove from the heat and use a stick blender to process until smooth. Season with salt and pepper. Allow to cool a little then cover and chill until completely cooled.

3. Just before serving, stir through the mint, crème fraîche and the lemon juice. Serve with toasted baguette slices and a extra dollop of the crème fraîche, if liked.
