Broccoli Fried Rice With Crispy Egg

Ingredients

- 1 tbsp olive oil, plus extra to fry the eggs
- 2 garlic cloves, minced
- 1cm fresh ginger, minced
- ½ tsp dried chilli flakes, or 1 red chilli, deseeded and finely chopped
- 300g 'rice' made from blitzed (or grated) broccoli
- 150g mixed crunchy vegetables (eg. sugar snap peas, mange tout, carrot, peppers), all finely sliced
- 2 tbsp soy sauce
- 3 spring onions, sliced

To serve:

- 2 eggs
- 2 tsp black sesame seeds
- 2 tsp crispy chilli oil

Method

1. Heat the oil in a medium frying pan and cook the garlic, ginger and chilli for 1 - 2 minutes, until softened but not to the point where they start to brown. Add the broccoli 'rice' and mixed vegetables, and stir fry for 4 - 5 minutes, until the broccoli is cooked through.

2. Add the soy sauce and spring onion, and stir fry until the onion softens. At the same time, fry the eggs in a separate frying pan with a little olive oil, to your liking.

3. Divide the broccoli fried 'rice' mixture between two bowls, topping with a crispy fried egg, sesame seeds and crispy chilli oil to serve.
