Ingredients
- 1 tbsp vegetable oil
- 8 good quality pork sausages
- 500g leeks, sliced
- 25g plain flour
- 450ml beef stock, made with 1 stock cube
- 1 tbsp Worcestershire sauce
- 1 tbsp wholegrain mustard
Method
1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6. Heat the oil in a large frying pan over a medium heat, and fry the sausages for 5 minutes to brown, turning often. Transfer to an ovenproof casserole dish.
2. Add the leeks to the frying pan and fry for 2 minutes, stir in the flour and cook for 30 seconds before gradually whisking in the stock, Worcestershire sauce and mustard. Bring to the boil, stirring, then pour over the sausages.
3. Cover and bake for 20 minutes or until the sausages are cooked through. Serve with steamed kale and mashed potato, if liked.
