Prosecco Jellies (alcoholic)

Takes: 20 minutes (plus chilling time)
Serves: 4 - 6

Ingredients

- 450ml elderflower cordial
- 25g caster sugar
- 4 gelatine leaves
- 250ml Prosecco

Method

1. Combine the cordial and sugar in a medium saucepan. Stir over a medium heat until the sugar has dissolved. Bring to the boil, reduce the heat and simmer for 5 minutes. Set aside.

2. Fill a small bowl with slightly warm water. Add the gelatine and leave for 5 minutes. Remove the gelatine from the water and squeeze out the liquid. Add to the elderflower syrup and whisk until dissolved. Pour in the Prosecco and stir well.

3. Pour the mixture into a large clean bowl and chill for 2 hours or until set. Use a fork to break up the jelly, then spoon into 4 - 6 glasses. Decorate with gold lustre dust, edible glitter and fresh raspberries, if liked.
