Mixed Berry Sponge Puddings

Ingredients

- 65g (2½oz) butter, melted, plus extra, softened, for greasing
- 200g (7oz) self raising flour
- 175ml (6fl oz) milk
- 1 egg, lightly beaten
- 2 tsp vanilla extract
- 225g (8oz) caster sugar
- 300g (10oz) frozen mixed berries
- 3 tbsp strawberry jam

Method

1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Lightly grease 6 x 250ml (8fl oz) ramekins or ovenproof dishes and place on a baking tray. Place the flour, milk, butter, egg, vanilla extract and 165g (5½oz) of the caster sugar in a large bowl and beat until smooth. Divide the berries between the dishes. Spoon the mixture evenly on top.

2. Place the remaining sugar and jam in a heatproof jug and add 175ml (6fl oz) boiling water. Stir until the sugar has dissolved. Spoon an even amount of this sauce over each pudding. Bake for 30 - 35 minutes or until puffed and golden. Stand for 5 minutes then serve dusted with icing sugar and with cream, if liked.
