Ingredients
- 4 garlic cloves, crushed
- 1 tbsp honey
- 2 tsp hot paprika
- Small handful of fresh flat-leaf parsley, finely chopped
- 1 tbsp olive oil
- 600g pork fillet, cut into 1cm-thick slices
- Salt and freshly ground black pepper
Method
1. Combine the garlic, honey, paprika, parsley and oil in a large bowl. Add the pork and toss to coat. Season with salt and pepper. Cover and marinate for 3 hours or overnight in the fridge.
2. Thread the pork on to skewers (if using wooden skewers, soak in cold water for 30 minutes before cooking).
3. Heat a griddle or frying pan over a medium-high heat. Cook the skewers, in batches if necessary, for 2 minutes on each side or until the pork is browned and cooked through. Alternatively cook on a barbecue.
4. Serve the skewers with new potatoes, a fresh watercress salad and a herby yoghurt dressing, if liked.
