Gin & Tonic Popsicles

Takes: 15 minutes plus freezing time
Serves: 8 (makes)

Ingredients

- 100g caster sugar
- 80ml gin
- Juice of 1 lime
- 225ml tonic water
- 4 strawberries, hulled and chopped
- 8 thin slices of cucumber

Method

1. Put the sugar and 50ml water in a saucepan and bring to the boil over a medium heat. Lower to a simmer and cook until the sugar has dissolved. Cool.

2. Pour the sugar syrup, gin, lime juice and tonic water into a jug and stir well.

3. Divide the mixture between 8 x 250ml paper cups and add the strawberries and cucumber slices. Freeze for 1 hour.

4. Insert a paper straw into the centre of each popsicle and freeze for 4 - 5 hours until solid.

5. Carefully remove the paper cups from the popsicles and serve straight away.
