Ingredients
- 120g butter, softened
- 100g soft light brown sugar
- 175g honey
- 2 egg yolks, plus 1 egg white, lightly whisked
- 400g plain flour, plus extra for dusting
- 1 tbsp ground ginger
- 1 tsp mixed spice
- 325g icing sugar
The method uses a cutter to obtain the bunny shape, or you can just leave it to your creative talents to replicate the shape with the tools you have available or go for a simple round shape gingerbread cookie using the top of a glass or cup as the cutter and decorate it as you wish.
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Line two baking trays with baking paper.
2. Using an electic mixer, beat the butter, sugar and honey together in a bowl until light and fluffy. Beat in the egg yolks. Sift in the flour, ginger and mixed spice and fold in. Knead the dough until smooth.
3. Roll the dough out on a floured surface to 5mm thick. Cut out 20 biscuits using a 10cm bunny-shaped cutter. Arrange on the baking trays, leaving space in between, and bake for 10 minutes or until lightly golden. Cool on a wire rack.
4. Place the egg white in a bowl and gradually mix in the icing sugar to a smooth paste. Place in a piping or food bag, snip off the end and decorate the bunnies using the picture as a guide. Leave to set, then serve.
