Takes: 50 minutes (plus standing time)
Serves: 6 - 8

Ingredients

- 400ml double cream
- 400ml milk
- 8 eggs, lightly beaten
- 225g caster sugar
- 2 tsp vanilla extract
- Butter, to grease
- 8 hot cross buns, cut horizontally into 3 slices
- Icing sugar, to dust
- Fresh berries and whipped cream to serve

Method

1. Put the double cream, milk, eggs, sugar and vanilla extract in a large mixing bowl and whisk until combined.

2. Grease a large ovenproof dish. Place the bottom of each hot cross bun over the base of the dish. Pour over ⅓ of the egg mixture. Repeat, finishing with the tops of the hot cross buns, then pour the remaining egg mixture into the dish. Stand for 20 minutes to allow the egg mixture to soak into the buns. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.

3. Bake the pudding for 40 minutes or until browned and bubbling. Dust with icing sugar and serve warm with fresh berries and whipped cream.

Not surprised that there is no nutritional information available. That's heart attack material. Might give it a go though
