Ingredients
- 200g plain flour
- 50g ground almonds
- 150g butter, chilled and diced
- 200g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 3 peaches, halved, stone removed and thickly sliced
- 2 nectarines, halved, stone removed and thickly sliced
- 3 tbsp apricot jam
- 1 tbsp lemon juice
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Line the base and sides of a 30cm x 20cm tray bake tin with baking paper, leaving the paper hanging over the two shorter sides. Place the flour, ground almonds, butter and 175g of the caster sugar in a food processor. Pulse to form fine breadcrumbs then add the egg, vanilla extract and 1 tbsp iced water and pulse until the dough comes together. Knead lightly until smooth then press into the base of the prepared tin.
2. Arrange the sliced peaches and nectarines in rows over the dough. Sprinkle over the rest of the caster sugar. Bake for 50 - 55 minutes until the pastry is golden around the edges. Cool for 15 minutes.
3. Heat the jam and lemon juice in a small pan over a low heat until just warmed. Brush all over the top of the hot tart. Serve warm or cold, decorated with fresh thyme leaves and whipped cream, if liked.
