Sticky Ginger Cake (microwave)

Ingredients

- Sunflower or vegetable oil
- 115g (4oz) self-raising flour
- 1 tsp bicarbonate of soda
- 3 tsp ground ginger
- 1 tsp ground cinnamon
- 80g (3oz) butter, cubed
- 80g (3oz) dark brown soft sugar
- 45g (1½oz) black treacle
- 45g (1½oz) golden syrup
- 80ml milk
- 2 medium eggs

For the icing:

- 115g (4oz) icing sugar
- 3 balls stem ginger (from a jar), diced

Method

1. Lightly oil the inside of a 22cm (9in) silicone loaf mould. Line the base and sides with non-stick baking paper. Cut the paper so that two of the opposite sides are long enough to rise about 4cm (1½in) above the rim of the mould - this will make it easier to lift the cake out once it is 'baked' (you can also use a non-stick loaf liner).

2. Put the flour, bicarbonate of soda and spices in a large bowl and mix well.

3. In a separate medium microwaveable bowl, add the butter, sugar, treacle and syrup. Cook, uncovered, on high for 2 minutes (1000W), 2½ minutes (800W), or until melted, stirring after 1½ minutes. Stir the milk into the treacle mixture, then add the eggs and whisk until well combined.

4. Make a well in the centre of the mixed flour, then slowly pour the treacle mixture into the well, whisking to form a smooth batter.

5. Pour the cake batter into the prepared mould and place in the centre of the microwave. Cook on high for 4 minutes (1000W), 5 minutes (800W), or until the cake is well risen, firm to the touch and a skewer inserted into the centre comes out clean.

6. Leave to cool in the mould for at least 30 minutes. Turn the cake out on to a board, peel off the lining paper and leave to cool.

7. Sift the icing sugar into a bowl and stir in enough cold water to make a fairly thick, smooth icing (around 4 - 5 tsp).

8. Drizzle the icing over the cake, then sprinkle with the ginger pieces. Leave to stand for 30 minutes before serving.

Notes:

A. If your microwave does not have a turntable, it is important to turn the food a few times to make sure it cooks evenly. Please take care when turning as the food will be hot so use oven gloves or tongs.

B. All microwave ovens may vary, the cooking times above are a guide.
