If made as twevlve biscuits, each provides 91 cals, 7.5g fat (of which 0.5g saturates), 7g sugar and 0.2g salt per portion.
Ingredients
- 55g (2oz) icing sugar, sieved + 30g (1oz) icing sugar, sieved on a plate
- Pinch of salt
- 1 tbsp (equivalent 7g/0.2oz) cacao powder
- 110g (3¾oz) ground almonds, sieved
- 1 egg white, large, whisked until a soft peak
- 1 tsp vanilla or almond extract
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.
2. Add sieved icing sugar, salt, cacao powder and almonds to a bowl and mix. To the whisked egg white add the vanilla or almond extract and mix.
3. Add the whisked egg white to the powder mixture to form a sticky dough.
4. Using a tablespoon, scoop out the mixture in roughly 15g (½oz) pieces and lay on sieved icing sugar. Lightly roll into balls and then flatten into a circle.
5. Once shaped, arrange on a lined baking tray.
6. Place the tray in the oven and bake for 15 minutes; the longer they bake, the crispier they will be. They will be soft when removed from the oven.
7. When cooked, remove from the tray and transfer the cookies onto a cooling rack before serving.
