Peppered Cilantro Rice (Puerto Rican)

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 6

If served as six portions, provides 156 cals, 3g fat (of which 0g saturates), 1g sugar and 0.3g salt per portion.

Ingredients

- 1 small onion, finely chopped
- 1 small sweet yellow pepper, finely chopped
- 1 small sweet red pepper, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 cups water
- 1 cup uncooked long grain rice
- ¾ tsp salt
- ¼ tsp pepper
- 2 tbsp minced fresh cilantro

Method

1. In a large saucepan, saute the onion, peppers and garlic in oil until crisp - tender. Add the water, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until rice is tender, 18 - 22 minutes.

2. Remove from the heat; fluff with a fork. Stir in cilantro.
