Ingredients
- 100g (4oz) pasta of choice
- 2 tsp olive oil
- 120g (4½oz) chicken breast fillet, sliced
- 1 bacon rasher, chopped
- 1 small garlic clove, crushed
- 85ml (3fl oz) double cream
- 1 tsp Dijon or wholegrain mustard, or to taste
- 1 tbsp grated Parmesan
- Salt and ground white pepper
- Handful of spinach
- 1 tbsp freshly chopped basil (optional)
- 1 tsbp pine nuts, toasted (optional)
Method
1. Cook the pasta in a large saucepan of boiling water according to the pack instructions.
2. Meanwhile, heat half the olive oil in a frying pan over a high heat and cook the chicken and bacon for 4 minutes or until golden and cooked through. Stir in the cream, mustard and garlic. Bring to the boil, then reduce the heat to low and simmer for 5 minutes. Add the Parmesan, season with salt and pepper, then stir in the spinach until just wilted.
3. Drain the pasta and add to the chicken sauce. Mix well to combine. Spoon into a bowl and top with the basil and pine nuts, if using. Serve.
