Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions provides 408 cals, 16g fat (of which 4g saturates), 7g sugar and 0.7g salt per portion.

Ingredients

- 455g (1lb) lean ground beef (90% lean)
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 425g (15oz) tinned tomato sauce
- 410g (14½oz) tinned no salt added diced tomatoes, drained
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp garlic powder
- ¼ tsp salt
- 2⅔ cups cooked brown rice
- Chopped green onions (optional)

Method

1. In a large skillet, cook beef, onion and pepper over medium heat 6 - 8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain.

2. Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally. Garnish with green onions, if desired.
