Simple Easter Decorated Biscuits

Preparation Time: 20 minutes (+ chilling time)
Cooking time: 10 minutes
Makes: 12

If made as twelve biscuits, each provides 300 cals, 9g fat (of which 6g saturates), 31g sugar and 0.2g salt per biscuit.

Ingredients

- 125g (5oz) butter, softened
- 125g (5oz) caster sugar
- 1 medium egg, beaten
- ½ tsp vanilla extract
- 290g (12oz) plain flour
- 250g (12oz) royal icing
- Assorted food colouring

Method

1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.

2. Place the butter in a large mixing bowl with the caster sugar. Beat until light and fluffy. Gradually beat in the egg, add the vanilla extract then gradually add the flour.

3. Bring the mixture together to a stiff dough. Gather into a ball, flatten, wrap up and chill for 30 minutes.

4. Roll the dough out on a work surface lightly dusted with flour until it's around the thickness of a €1 coin. Using Easter-themed cutters (if you have them), cut out the biscuits.

5. Line 2 large trays with baking parchment, place the cut-out shapes on them and bake for 8 - 10 minutes, depending on size, until just golden brown.

6. Allow to cool and firm up before transferring to a cooling rack to cool completely.

7. To decorate, make up the icing as directed on the packet. Divide equally between different bowls, depending on how many colours you're using, adding a little food colouring to each bowl. Place the mixture into piping bags, or just spoon it on and decorate biscuits with the icing.
