Ingredients
- 6 oranges (2 zested)
- 225g (7½oz) granuated sugar
- 220g (7½oz) water
- 4 sprigs of rosemary
Method
1. Peel the oranges with a pairing knife and ensure all the remaining pith is picked off.
2. Slice each orange into 5 or 6 slices and pit in a heatproof bowl.
3. Place the granulated sugar and half of the water into a small pan and heat until the sugar dissolves.
4. Leave the pan on the heat until it turns a deep caramel colour.
5. Remove from heat and add the remaining water (be careful, stand back - it will spit !).
6. Stir until all lumps have gone, return to a low heat to gently melt any remain lumps.
7. Pour half over the orange segments.
8. Add zest and sprigs of rosemary to remaining syrup, simmer for 2 minutes, before sieving and spooning over remaining fruit.
9. Leave to cool.
